I want to buy a new vanity that is 3 inches longer than current one. Both have center sink. Will this cause any plumbing to be changed

This would really depend on where your drain and supply lines coming out from the wall are. Very rarely are they center to what you have now.
3″ is not a lot. You should be able to just swing the trap to line up. Or install a new trap. As far as the supply lines go. Either they will reach or you will just need to replace them with longer ones. It’s really not a big deal. Send me a picture if you like.
