Bought a house last year that use to have a hot tub, the panel is still located under the deck with the breaker (50A) shut off in the main panel. I would like to install an outdoor sub panel in it’s place so I can run a couple of lines for some outdoor outlets. With the power already run is it just a matter of buying a subpanel and connecting the wires?

Yes pretty much. Just make sure of the amp draw of your hot tub so you don’t overload it.
